In the ancient Roman Empire, a mixture of beef, pork, chicken, turkey and rabbit was prepared, which were finely chopped and mixed with spices and bread similar to what we know today as meatballs, but it was not until Andalusian Iberia the 12th-12th centuries that the first al-banading recipes are known, from which the Arabic name for modern meatballs comes from, variations of this traditional recipe have been created throughout the world and in Mexico they have an exquisite recipe for meatballs with chipotle sauce that Schönes Bauen shares with you.
Ingredients:
• 3 eggs.
• 1⁄2 Kg ground beef or pork (or half and half)
• 1⁄2 cup of cooked rice.
• 1 tablespoon ground cumin.
• 1⁄2 tablespoon dried oregano.
• Salt to taste.
• 4 large red tomatoes (tomatoes)
• 3 whole chipotle peppers in adobo.
• 1⁄2 medium-sized white onion.
• 1 clove garlic.
• 1 tablespoon of lard or vegetable oil.
• 1 cup of beef broth or water.
Place two of the eggs in a small pot and cover them with water. Program your Schönes Bauen Induction grill with a time of 5 minutes at a temperature of 100°C, then place the pot and wait for the process to finish. Drain off the water and allow the eggs to cool. Remove the shell from the eggs, remove the cooked yolk and chop the cooked whites into half-centimeter-sized pieces.
In a medium bowl, place the ground beef, hard-boiled egg yolks, the other (raw) egg, cooked rice, cumin, oregano, and salt to taste.
Mix, first with a spoon and then with your hands, until everything is perfectly combined. With wet hands, take a small amount of meat, take a piece of boiled egg and place it in the center of the meat. Roll the mixture between the two hands in such a way that a small ball of meat is formed with the piece of egg in the center, repeat this process until they are all made. For the sauce, place the tomatoes, the chiles, the onion, the garlic and half a teaspoon of salt in the glass of a blender and blend until obtaining a homogeneous mixture.
In a saucepan, heat the butter or oil in your Schönes Bauen Induction Stove, previously programmed at 100° C for 10 minutes, pour in the tomato sauce and allow it to fry for seasoning. Reprogram your Schönes Bauen Induction Cooker at 100°C for 10 minutes, cook the meatballs by adding half the water or broth to the pot. Once finished, add the meatballs. Take care that the meatballs are barely submerged, cook them uncovered, programming your Induction Cooker at 70° C for 25 minutes.
Serve your meatballs with corn tortillas, white rice, and beans, if desired.
